sweet tomato pasta sauce

If you guys follow my @justbsmiling_ Instagram stories you probably know that I love food and I love to cook. Truth, if I wasn’t making beautiful floral creations everyday I’d imagine myself doing something with food. Cooking is my passion, it’s something that allows to me to still be creative and a great stress reducer in my day to day life. So I thought I’d start sharing some of my recipes with you.

I’ve started off with my Dad’s super simple pasta sauce. It’s tomato base with a hint of sweetness, and it’s to die for. It really doesn’t take more than 10 minutes to prep, but the key is to cook it all on low for an hour so all the beautiful flavours melt together.

I’ve tripled the recipe here so I can freeze portions of it for Fall, which I recommend doing ;). It’s an easy go-to middle of the week dinner.

INGREDIENTS

3 28 oz tin of San Marzano whole Roma tomatoes (look for D.O.P. on the tin, those are the good ones)

1 1/2 sweet onion, finely chopped

5-6 garlic cloves, crushed

1 big bunch of basil

EVOO

3 tablespoons white sugar

salt & pepper to taste

2 tablespoons butter

** parmesan rinds (optional)


METHOD

Heat oil in a medium size dutch oven or pot, over medium high heat.

Add crushed garlic and stir for about a minute. Add in your chopped onion and stir for another 5 minutes.

Add your tomatoes, basil (stems on), sugar and salt and pepper to taste.

**If you have parmesan rinds that you’re wanting to use up you can throw them into the sauce at this point too, it will add that little bit of cheesy flavour to the pasta.

Cover and cook on low for an hour.

Once you’re tomato sauce has been cooking for an hour, take it off the heat. With tongs take out all of the basil, along with any parmesan rinds you might have added.

Add in butter & using an immersion hand blender or blender, puree the sauce until it’s smooth.

Serve over your favourite pasta, and top with a dollop of ricotta cheese if you want all your pasta dreams to come true.
